Spiced Pear Upside-Down Cake
Ingredients
- 3 ripe pears, peeled, cored, and sliced
- 1/2 cup unsalted butter
- 1 cup packed brown sugar
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cardamom
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup whole milk
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
- In a small saucepan, melt 1/2 cup butter over medium heat. Stir in the brown sugar until dissolved, then pour into the prepared cake pan. Arrange the pear slices over the sugar mixture.
- In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, ginger, and cardamom.
- In a large bowl, beat the butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture alternately with the milk, beginning and ending with the dry ingredients.
- Pour the batter over the pears in the cake pan. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then invert onto a serving plate.
