Grilled Chicken Salad

A grilled chicken salad is a perfect option for a quick and healthy lunch. Packed with lean protein and fresh vegetables, it's both satisfying and nourishing.

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 4 cups mixed greens (lettuce, spinach, arugula)
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions:

  1. Season the chicken breasts with salt and pepper.
  2. Grill the chicken over medium-high heat for about 5-7 minutes on each side, until fully cooked. Let it rest before slicing.
  3. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.
